Watermelon Juice
Serves: 6-8

Wait Time: variable, up to 1 day
- 1 whole watermelon, fresh, cold, chopped and rind removed (sweeter the better)
- 2 cups lemon balm leaves (and/or sweet basil)
Put and blend watermelon in a food processor.
Wash and place lemon balm in a jar. Pour watermelon puree in jar with the lemon balm.
Cap in refrigerator for at least 1 hour (ideally overnight).
If your watermelon is store bought, it may not be as sweet. You have two options: strain out the pulp (sadly) before placing in a jar, or mix in 1/4 cup raw sugar while in the jar. Both will increase the sweetness, but at a cost (fiber or calories).
If you want to serve immediately, but have advance notice, you can create a sugar rue (dissolve 1/4 cup raw sugar in 1/2 cup water on the stove with the lemon balm until it is wilted), and refrigerate the mix. Add a portion of the mixture with the fresh cold watermelon, blend and immediately serve.
